Sustainable chicken-sandwich chain Mt. Joy opening new Seattle location in Amazon space

Mt. Joy, the fast-casual chicken sandwich restaurant built around sustainable farming practices, is opening its second location in Seattle. The new space, opening Nov. 15, will be at The Deck, an Amazon-owned food court in the South Lake Union neighborhood.

Founded by tech entrepreneur Robbie Cape and restaurateur Ethan Stowell, Mt. Joy opened its first brick-and-mortar restaurant last December on Capitol Hill after getting started with a food truck in that neighborhood. The company raised $1.5 million from a variety of investors at the time.

Mt. Joy’s focus is on sustainable farming practices and locally sourced ingredients intended to disrupt the agriculture and food industries from start to finish. Regenerative agriculture is part of the mantra because of its potential to combat climate change by improving the organic makeup of soil and removing carbon from the atmosphere.

Kristen Rincon, Amazon’s head of asset management for North America, said in a statement that Mt. Joy’s practices help it align with the tech giant’s own Climate Pledge to reduce CO2 emissions.

The restaurant’s fried chicken sandwich is its flagship item, but Mt. Joy also offers tenders, wings, fries, a portobello sandwich, a vegan tofu wrap, and shakes. The company said it sources over 90% of its food from four states: Washington, Oregon, California and Idaho.

Mt. Joy says it plans to expand into more markets across the Pacific Northwest in 2025 and beyond.

Cape, Mt. Joy’s CEO, previously headed up telehealth company 98point6. He also spent 11 years at Microsoft and was co-founder and CEO at Cozi, a family organizing app.

Mt. Joy will hold an opening celebration at its new location on Nov. 15, 10:30 a.m. to 3 p.m. The Deck is located at 1051 Thomas St.
